A combination of vegetables simple to prepare. *
2 lbs. zucchini, sliced 1/4 c. chopped green onion 1 lb. mushrooms, sliced 1 eggplant, sliced 1/4-1/2 c. extra virgin olive oil salt & pepper 2 large tomatoes, sliced 4 cloves garlic, minced 1 green pepper, diced 1/2 c. grated parmesan cheese
 Saute zucchini, green onions, mushrooms,eggplant in oil until lightly browned. Add some garlic and stir until fragrant. Season with salt & pepper. Place zucchini mixture, tomatoes, peppers, and rest of garlic in 9 x 9 baking pan. Cover and bake 350 for 20 min. Sprinkle with cheese and bake 20 mins. longer. *A good diabetic recipe.
