Waiting until the bananas are very ripe will be the difference between good and great flavor.
1/2 cup butter, room temperature
1 cup sugar
2 eggs
1 1/2 cups very ripe bananas (3 bananas), mashed
2 cups flour
1/2 teaspoon salt
1/2 teaspoon baking soda

Cream butter and sugar. Add eggs and mix. Add bananas and mix. Combine all dry ingredients and add a little at a time to butter mixture. Let stand 20 minutes. Pour into loaf pan and bake at 350 degrees for 40-45 minutes or until wooden cake tester comes out clean.
