A little taste of sweet with the salmon makes for a nice combination.
 Glaze: 1/4 c. apricot jam 2 T. balsamic vinegar 1 T. ginger, minced 1 T. garlic, minced 1/8 tsp. salt
2 (8 oz.) salmon fillets
Mix first 5 ingredients in a saucepan. Heat on low for 3-4 min. until slightly thickened. Turn off heat and cool slightly. Cover baking sheet with foil. Place salmon on baking sheet, top with glaze and bake at 425 for 10-12 min. |
