Lemon Chicken Aaron
This dish can be doubled so you can heat the leftovers the next day and have a quick, ready-made meal.

3 lb. chicken, cut into pieces
Flour
Vegetable oil
 
1 large or 2 medium yellow onions
1/4 c. (1 cube) butter
3 T. flour
2 T dry mustard
2 tsp. dried basil
1 c. water
1/2 c. lemon juice

Flour chicken and saute in oil until browned. Place chicken in 9 x 13 baking dish. Saute onions in butter until tender, then stir in flour, mustard, & basil. Gradually add in water and lemon juice. Stir over low heat until slightly thickened. Pour over chicken. Add other seasonings if preferred. Cover & bake at 350 for 1 hour. Serve with rice.
